Toastada con Tomate compote and olive oil and ham Ingredients: 100ml milk 200g flour 8 g yeast 1 egg 50g butter 70 g sugar 2-3 tbsp oil for brushing Method: Tostada And butter and sugar in a big bowl and mix them properly, add to eggs to the mixture and mix it, then add yeast and give it a light mix. To this mixture add milk and flour and mix it till it turns into a sticky dough ball. Once the dough ball in formed, cover it with kling flim and keep it to rest for 30mins. Take the sticky dough on a oiled surface and knead it for a few minutes. Make small buns of the dough and keep it to prove 15 mins. After the proving time, bake the buns in a preheated oven at 200 degrees for about 7 mins, then take them out and brush them with oil and put them in for 10 mins more. Compote In a frying pan, heat up some Spanish olive oil, add slivered garlic and let it cook at a high flame, when its nice and cooked add chopped tomatoes, if needed add more olive oil, after the mixture is coagulated, add salt, pepper and dry mixed herb. As the mixture comes together, add malt vinegar. Once the whole mixture is reduced take it of flame and your tomato compote is ready. Magdalenas: Ingredients: 4 eggs 135g sugar 115g butter 125g flour 2g salt 8 ml vanilla 10 g lemon zest 1 tbsp baking powder 1 tbsp milk Method: Break four eggs in a big bowl and add sugar to it and beat it all together till it forms little ribbons. To this mixture add melted butter and mix them further, add vanilla extract, milk, lemon zest, flour, baking powder and salt and mix them properly, once the batter is ready, spoon the mixtures into cupcake mould. Bake the mixture in a preheated oven at 180 degrees for 20 mins. Dip the cupcakes into some lemon juice. Churros and Chocolate dip Ingredients: 475ml water 225g Butter 60g sugar 6g salt 250g flour 6 eggs sugar dust/roll Method: Take some water in a saucepan, add salt, sugar and butter, let this mixture heat. Once the mixture starts boiling, add flour to it and mix, bring the heat to low, mix the whole mixture till it turns into a small ball of dough. Pour it in a bowl and let it cool. Once cooled, add 6 eggs, one by one, and mix it properly until its completely combined. Transfer this dough into a piping bag with a star tip nozzle. Pipe the churros into piping hot oil, once the ridges are nice and brown, take it out on an absorbent paper. Roll the churros into castor sugar, your churros are ready. The jamon and selection of cured meats was the highlight. 2:53 Mercat de Sant Josep de la Boqueria - Often known in short just as La Boqueria, this historical market is a food lover's paradise and a pilgrimage destination. We arrived early in the morning and headed first to Bar Pinotxo to eat our second breakfast. I ordered an omelet with eggplant and a plate of garbanzo beans and blood sausage. The dish was simple, but it was incredibly delicious. Additionally, the coffee was extremely good. Total price - 12.80 EUR ($14.04) 6:59 El Quim De La Boqueria - After finishing with the first place of tapas, I wandered over to another legendary tapas bar within La Boqueria market known as El Quim De La Boqueria. It’s a very expensive place, but I knew I wanted to try the fried eggs with baby squid. The dish was a simple combination of ingredients, but it was cooked perfectly, and it was incredibly delicious. I also couldn’t resist a plate of fried chilies. Total price - 32.05 EUR ($35.16) There are dozens of things to eat and try at La Boqueria, and after all the salty food I was ready to have a passion fruit juice. And then finally, to conclude the Barcelona food tour of La Boqueria, I bought a cone of sliced Jamón Ibérico. 14:14 Gothic Quarter, Barcelona Cathedral - After an amazing food tour, we walked around the Christopher Columbus monument and then continued on walking around the Gothic Quarter of Barcelona. The Barcelona Cathedral was originally closed when we arrived, but I came back in a few minutes and walked around the Barcelona Cathedral as well. 16:37 Xarcutería La Pineda - Located just around the corner from the Barcelona Cathedral, I headed over to a place called Xarcutería La Pineda (recommended by Chris English), to try the botifarra blanca and a cup of vermouth. It’s an amazing little family run shop with a fantastic array of meats and drinks. Total price - 11.50 EUR 21:25 Basílica de la Sagrada Família - One of the most famous attractions in Barcelona is the Sagrada Familia, a basilica that was famous designed by Antoni Gaudi. I had read and dreamed about visiting for many years, so I was very excited to finally have the chance to visit. What amazed me is how dark and gothic it looks from the outside, yet how light and happy it is on the inside. Sagrada Familia is truly a stunning architectural feat, and an attraction you must visit in Barcelona. Along with visiting the main part of Sagrada Familia, I also bought tickets to go to the Nativity Tower. Going to the top of the tower and walking down was the highlight of visiting. Price - 29.00 EUR per person w/ tower entrance 26:16 Catalan Food for dinner at Restaurant Portolés - For dinner Ying and I walked over to Restaurant Portolés, a local Catalan food restaurant. Some of the main dishes I ordered included Fideuà and Rollitos De Pollo, all of which were delicious. It’s a great restaurant to try in Barcelona. Total price - 26.50 EUR This was a fantastic day in Barcelona, packed with delicious food and attractions in Barcelona. When it comes to Shakshuka, I'm a purist. I like to keep things simple and easy, focusing on the two star ingredients - the tomatoes and the eggs. The spice of the harissa (a magical Tunisian chili paste) and smokiness of the Spanish paprika are GLORIOUS alongside the sweet yet acidic tomatoes and creamy, rich eggs. Shakshuka is the ultimate breakfast or brunch dish because its all cooked in a single pan and can easily feed a crowd. Plus, its super healthy and will leave you satisfied but not weighed down. Give it a try and let me know what you think in the comments! Lots of Love, PG N.B: The measurements for this Shakshuka recipe should be taken with a grain of salt (see what I did there?!) Jokes aside, Shakshuka is something you should experiment with to find the perfect balance of spice, acidity and sweetness that works for you. Measurements will vary depending on the sweetness of the tomatoes and onion so be sure to taste and season in stages! I promise, once you make it, you will make it time and time again! Enjoy! Ingredients: 1/8 cup Organic extra virgin olive oil 8 Eggs (this recipe calls for 2-3 eggs per serving (I usually eat 3 eggs in a serving. You can easily adjust other ingredients depending on how many servings you are making) 5 large, ripe tomatoes – chopped into 1” cubes (overly ripe tomatoes are perfect here) 1 medium onion – diced 3-5 cloves garlic – roughly chopped (use more or less depending on your garlic tolerance. Also, mince or dice depending on how you like your garlic. I prefer a rough chop for this recipe because the garlic will have less of a chance to burn when frying if left larger.) 1 tsp smoked Spanish paprika 1 ¼ tsp harissa (use more or less depending on your spice tolerance – this stuff is HOT!) Salt and Pepper to taste 1 handful kalamata olives – roughly chopped and pitted (substitute any olive you like here) 1 handful fresh cilantro/coriander – roughly chopped (substitute parsley, dill, mint, or tarragon) Method: 1. Heat a large, cast iron skillet over medium heat. 2. Add olive oil to the pan. 3. Add onions and garlic to the oil, season with a pinch of salt and sauté for 10-15 minutes until translucent and soft – stirring occasionally so as not to burn. 4. Sprinkle in smoked paprika and coat the onions and garlic. Toast for 1-2 minutes, stirring constantly to prevent burning. 5. Add in tomatoes and season with another pinch of salt and freshly cracked black pepper. 6. Toss the tomatoes with the onions and garlic. Lower the heat to a medium-low and cover the pan with a lid to trap the steam. Continue to cook the tomatoes for 10-15 minutes, stirring occasionally to prevent the bottom of the pan from burning. 7. When the tomatoes reach the desired “chunkiness” (very technical, I know!) remove the lid and begin to crack the eggs directly into the tomato sauce. TIP: With your wooden spoon or spatula, create a small hole in the sauce and crack the egg into the hole you’ve created. This will help the egg to cook into the sauce, rather than over top of it. 8. Cover with a lid and cook until the whites have hardened but the yolks are still runny – approximately 6-8 minutes (This is personal preference. If you prefer your eggs well done like my picky brother, cook them a little bit longer.) 9. Remove from heat and garnish with your olives and fresh herbs. 10. Serve and enjoy your Paleo Shakshuka. So we're outside at a little patio right across from our hotel. And we're going to be doing a battle of the soups. We plan on trying two different soups that are from the region of Córdoba, Andalusia in southern Spain. And they are called Gazpacho and Salmorejo. And there is some similarities and some differences between these two cold soups, so we're going to be showing you what those are. So our two soups have arrived. I'm having Gazpacho, Sam is having Salmorejo. And at first glance they do look quite similar. The same color because it is a tomato base but the topping is a little bit different. Now we're going to be actually tasting them and telling you about the ingedients and what sets these two apart. Okay, so time for the first spoonful of Gazpacho. Oh ho ho, baby! Mmmm. That is so good. It is tangy because of the tomato. It is served cold so it is really refreshing. And this one has a lot more ingredients than Salmorejo. So I just put in some chopped bell peppers, green and red peppers. It has also got a bit of onions in there. And it was drizzled with olive oil on top. So a great combination on a hot summer day. I'm just going to keep enjoying this over here. It is so good. So two more things I'll mention about Gazpacho. If you don't want like a full bowl of soup you can actually get it as a drink in a glass and that is cheaper because it is a smaller portion. And also Spanish Gazpacho is really different from Moroccan Gazpacho, which is what I was used to. The Moroccan recipe has chickpeas and beans so don't be surprised if you come to Spain and there are no chickpeas in your Gazpacho. So it is dinner time in Madrid and today we are here at a local restaurant where we're going to be trying two different dishes. We are planning to eat Paella and something called Fideuà. They are two dishes from the region of Valencia. And there are some similarities and some differences. So it is breakfast time here in Madrid. We've just rolled out of bed at 10 am. Which is a bit unusual. But we're here at a local cafe and we're going to have a traditional Spanish breakfast. So we have ordered a hot chocolate with Churros and Porras. So we're going to show you what those are like in just a few minutes. So what I find unique about the Spanish Churros is the shape. When we had these in South America they were usually like long little strips. And also there is no filing in these. I still haven't come across any Spanish Churros that have fillings. Whereas in South America they were stuffed with chocolate, vanilla pudding, dulce de leche. So that is another difference. So it is time for another breakfast here in Madrid. Today we are having the madrileño, which is the local breakfast that everybody likes in this city. And if you look down here you'll be able to see this is Tortilla. Which is a potato and egg type of dish. So it is kind of like a potato and egg omelette. And it is delicious. It comes with a side of bread. And I can't wait to dig in. Okay, so what is the price for this delicious breakfast. This tasty breakfast comes in at around four Euros and usually it comes with a juice. They didn't have any today but it did come with a coffee and bread. And it is a filling breakfast. It is a great way to start our day.
